roasted baby carrots
I spent a day in the kitchen with Mimi Maumus of Homemade Catering.
Mimi made these wondeful roasted baby carrots from carrots grown at Woodlan Gardens. They were amazing! Thanks Mimi for sharing!
ingredients
1 bunch baby carrots
1 T olive oil
salt & pepper to taste>
1/8 t curry powder
directions
-preheat oven to 475.
-rinse carrots. peel or don't peel - up to you.
-cut carrots in half widthwise if more than 1" thick.
-toss with olive oil and spices.
-place on a baking sheet in a single layer - you don't want the carrots to steam, so give 'em space!
-roast for 5 minutes and then broil for a few minutes to color.
-the carrots should have a little snap to them still.
