i’m lucky to live across the street from a big pasture, so i get to see lots of sky. just seeing lots of sky can give you all the beauty you need, so remember to go out and look up! here’s some amazing sights i would’ve missed if i didn’t.
when i first came to the south, i was completely amazed by the kudzu. to this very day, i am still amazed how it can cover something so quickly and transform an object into something monster-like. as invasive and intrusive as it is, there is something kind of magical about it. on a recent drive i documented some good examples of kudzu in action.
i set sail to try to make a blueberry upside down cake. not wanting to use the 2 sticks of butter that should have gone into the dessert i decided to use a little less. i figured that if anything i was really making a cobbler if the upside down part didn't happen. as i suspected i ended up with a cobbler.
6 tablespoons butter, softened,
divided
2 cups
fresh blueberries
3/4 cup
organic cane sugar
1 egg
1 teaspoon
vanilla extract
1-1/4 cups
AP flour
1-1/2 teaspoons
baking powder
1/2 cup
buttermilk
directionspre-heat oven to 350 degrees
mix the blueberries and 1 Tbsp butter in a 8 x 8 inch size pan or a medium sized cast iron skillet. then mix the rest of the ingredients in a medium sized bowl. spoon the mixture on top of the blueberries. it is ok if it looks a little rustic.
bake for 40 minutes or until the top looks slightly browned.
serve it up alongside some freshly whipped cream. i added a touch of maple syrup and some orange zest.
only in small town georgia would you find this!
it’s no fun seeing brown fields and pastures before summer even starts. april and may we hardly had any rain, but thankfully, the last couple weeks of june we started getting rain. the only thing is, the rain usually came with violent thunderstorms, power outages, and trees and limbs down everywhere. at least we got some rain. now the pastures and fields are all a vibrant green again, and driving through the country is , once again, a trip through a green land.
